OK these are my shortcuts. I use bagged coleslaw mix which is just cabbage and carrots. And when I have an empty jar of “bread and butter pickles”that we’re finished with, I keep the empty jar ( about 1/3 full of the leftover pickle liquid) in the fridge and add 1/2 cup of vinegar and some oregano to the jar. Then stuff it full of the dry coleslaw, let it sit for a few days.
Not as good as yours but when the kids want pupusas I love having the jar of curtido ready in the fridge.
